Slow Cooker Beef Stroganoff Recipe

Easy Slow Cooker Beef Stroganoff

I love cooking with my slow cooker.  I love having the hustle and bustle of dinner preparation over and done with long before all the kids come home from school.  And I love it even more when everyone likes what is for dinner!  One of my favorite recipes for my slow cooker is beef stroganoff.  This recipe is kind of a spin-off of from a beef gravy and noodles recipe my mother-in-law shared with me, and now it’s a hit every time I make it.  And it’s super easy to make! I hope you enjoy it too!

All the ingredients you need are pictured below. Most of these items I usually have on hand at my house, except the beef.


To make this stroganoff, I use pre-cut stew meat from the grocery store.  If you happen to have another cut of beef, or find another one that’s on sale, I’m sure it would work great too.  Just cube it up before you toss it in.  I usually use just the small package that is around 1 to 1 ½ lbs – that will feed my family of six with maybe a small portion left over. If I have company, I’ll buy a larger package and double the rest of the recipe.

Stew meat, beef broth, and seasonings go into the slow cooker for 6-8 hours

Just put the raw beef, 1 can of beef broth, 1 teaspoon of garlic, 1 teaspoon dried minced onion, ¼ teaspoon of salt, and ¼ teaspoon of pepper in the crock pot and let it cook for 6 to 8 hours on low.

Once the beef is nice and tender – falling apart when you poke it with a spoon – it’s time to thicken the gravy. Mix 4 tablespoons of flour with 5 teaspoons of water and mix until smooth. You don’t want any lumps of flour left in it or your gravy will be lumpy!  I usually put the flour and water in a small container with a tight-fitting lid and shake it until it’s well blended.

Stir the flour-water mixture into the beef mixture in the crock pot and mix until well combined. Then add 2 teaspoons of dried parsley and ¼ cup of sour cream and stir until sour cream is completely mixed in. Turn the crock pot to high and let the mixture cook and thicken while you cook the egg noodles.

Once the noodles are cooked and drained, serve the beef gravy over your hot noodles.  YUM!  Pair with a side of your favorite veggies and dinner is served!
